Carmine, also known as edible red 102 (Japan), edible red 7, Ponceorn 4R, bright scarlet, is an aqueous azo colorant, its chemical name is 1- (4' -sulfonate-1 '-naphthalazo) -2-naphthalene-6, 8-disulfonate trisodium salt, is the isomer of amaranth, the molecular formula is C20H11O10N2S3Na3. Carmine is one of the most widely used monoazo synthetic pigments in our country. In recent years, it has been reported that both carmine and Sudan  which is banned by the European Union standard, belong to azo pigments. Azo compounds can be metabolized to aromatic amines, the precursors of mutagens, in vivo. Our country stipulates the scope of application and usage are the same as amaranth
