Glucan is the most common type of high molecular polysaccharide chain in nature, which is synthesized by the polymerization of glucose monomer. D-pyranose glucose is the basic unit, and its structure is diverse. There are three types of glycosidic bonds: (1→3), (1→4) and (1→6), which are divided into α type and β type. α-glucan is a band-like single-chain structure with a non-helical extension along the fiber axis. It has basically no biological activity and represents substances such as starch, which provides the main energy for the human body. Beta glucan is made from synthetic precursor uridine diphosphate glucose into the polymer by enzyme catalysis. With the development of purification, structure identification, functional characterization and other research techniques, β-glucan has been found to have special physiological activities and medicinal value. In recent years, β-glucan has gradually become a research hotspot in the food field. Studies have reported that β-glucans have a variety of biological activities, such as immune regulation, anti-tumor, antibacterial, antioxidant, anti-aging, radiation protection, anti-inflammation, hypoglycemic and lipid-lowering activities. Among them, the activities of β-glucan in immunology and anti-tumor were reported earlier and further studied, and other activities were mainly reported after 2000. Beta glucan has been used in medicine, functional food, food additives, cosmetics and feed has been widely used in health industry.
