Vitamin C is white powder, molecular weight of 176.12, is usually a flake, sometimes the acicular monoclinic crystal. Odorless, acid taste, soluble in water, slightly soluble in ethanol, insoluble in ether, chloroform, petroleum ether and other organic solvents. Structure point of view, is very similar to vitamin C and sugar, has two asymmetric carbon atoms in molecules (C4, C5), can form the four optical isomers.
